PG BROCCOLI (Parmesan Garlic Broccoli)

A fun name is just a small part of what makes this dish great. It’s super simple to make, only 62 calories per serving and doesn’t skimp on flavor, in the least. The best part? PG Broccoli can be served warm or cold so it’s perfect for any season and occasion!

INGREDIENTS*

7 cups of broccoli florets

2 Tbsp EVOO (will be used as 1 Tbsp & 1 Tbsp)

2 Tbsp grated Parmesan

Juice from 1 lemon 

2 tsp garlic powder (or to taste)

Salt & Pepper to taste

*Yields approximately 5.5 servings. Serving size is 1.3 cups, at 62 calories per serving.

DIRECTIONS

  1. Heat oven to 400°.
  2. In a large bowl, toss broccoli, 1 Tbsp EVOO, garlic powder, salt and pepper until well coated. 
  3. On a foil lined baking sheet spread broccoli out in single layer. Bake for 22-25 minutes, or until tender.
  4. Remove from oven and immediately toss with remaining 1 Tbsp EVOO, lemon juice and parmesan.
  5. Serve warm or refrigerate for 2+ hours and enjoy!
